Hi, try pouring the milk from higher with a thin stream. This tends to be a lot gentler on the crema and doesn't wash it out as much. When you a ready to start the pattern lower the jug and tilt the nozzle lower into the cup, this will let the foam pour out and you should get the really nice contrast.

No there is no camara trick in this picture Gappy is right in that pouring from a little bit of height and a little slower helps to reduce the milk and espresso swirling that will sometimes leave more of a mixed surface color. I also use the milk stream to sink any milk pockets before I start pouring.
